Here’s a quick skillet version of fettuccini bolognese using chicken sausage instead of beef. and mushrooms simmered with tomatoes, then tossed with pasta.

Cook pasta according to package directions.
Meanwhile, heat oil in large skillet over medium-high heat. Remove casings from sausage and discard. Add sausage meat to the pan along with onion and garlic salt. Cook 5 minutes, stirring and breaking up the sausage. When done it will no longer be pink. Drain and add meat back to the pan.
Add mushrooms and tomato paste. Cook 2 to 3 minutes or until mushrooms are tender.
Add undrained tomatoes to pan and simmer 5 minutes, reducing heat as needed. Stir in cooked pasta; simmer 2 minutes more or until hot. Serve immediately over cooked pasta.
