Pesto Green Beans and Tomatoes

This delicious side dish has a few components to it, but they’re all easy.

  1. Make pesto vinaigrette using this recipe:
  2. Cook green beans.
  3. Toss everything together.

Whew that was so hard… not!

P.S. Make extra vinaigrette and use it on salads or sandwiches.

Instructions
  1. Trim beans and cook, covered, in a small amount of boiling salted water for 10 to 15 minutes or until crisp-tender. Drain and rinse under cool water. Drain and pat dry with paper towels.
  2. Halve tomatoes and place in a large bowl. Add green beans and vinaigrette and toss until well coated. Serve immediately or chill in the refrigerate up to 8 hours.
