Dirty Quinoa

Serves: 3-4 people

This recipe for “dirty” quinoa is adapted from the dirty rice I used to make all the time when I was single and cooking was a low priority.  I also used to chop up hotdogs and throw them in to make a meal, but um I don’t do that anymore. Now it’s just clean, whole, unprocessed food for me.  I sure wish they made a natural hotdog flavor I could add to a dish to get my hotdog fix.  Anyway, enough about hot dogs, let’s make some dirty quinoa!

Ingredients

  • Olive oil
  • 1 clove garlic
  • 1/2 onion
  • 1/2 green pepper
  • 1 medium to large carrot
  • 1 stalk of celery
  • Any other leftover fresh veggies laying around in your frig that need to get et.  Cabbage, mushrooms, fennel, turnips… all good.
  • lemon juice
  • Fresh parsley and/or cilantro (optional)
  • 1 C quinoa (any color)
  • 2 C chicken or vegetable broth (or water)
  • 1/2 C baby peas (frozen ok)
  • feta cheese for topping (optional)

Tools

  • medium chef’s knife
  • cutting board
  • medium saucepan with cover
  • wooden spoon or spatula
  • dry measuring cup

Directions

  1. Scoop a 1/2 C frozen baby peas and set on counter to thaw.
  2. Heat pan on medium, then add 1-2 tsp of olive oil.
  3. Clean and trim garlic, onion, pepper, celery, carrot then coarsely chop.  Add to pan and saute about five minutes.
  4. Add 1 cup quinoa and stir for a minute or so
  5. Add 2 cups chicken or veg broth, cover and simmer for 15 minutes.
  6. Remove from heat, open lid, dump baby peas in and re-cover.  Let sit 10 minutes then stir in.
  7. Clean and chop parsley/cilantro if using.
  8. Serve with feta and parsley/cilantro for topping.

Tips and Timesavers

  • Often you can purchase a container of pre-chopped veggies called “mirepoix” at the supermarket, which comes in very handy for this kind of dish.  About a cup or so will do it.
  • My biggest time suck is chopping fresh herbs because I like them clean clean clean and I don’t like the stems (a lot of people do though).  So for me having pre-chopped herbs on hand is pure joy.
  • Pre-minced garlic is also good, but the flavor of fresh garlic is better.
