Super Easy Baked Chicken Breasts

This recipe for baked chicken breasts is truly super easy.  Baked (or roasted) chicken breasts can easily dry out and taste tough, but this recipe gives consistently moist, delicious results.

Ingredients

2 to 2-1/2 lbs chicken breasts (chicken thighs work well too but have a different nutritional profile)
1 Tbsp Olive oil
1-1/2 Tbsp Adobo or other seasoning blend

Tools

  • roasting pan
  • tongs
  • set of measuring spoons

Directions

  1. Preheat convection oven to 400F.
  2. Rub chicken breasts with olive oil and sprinkle both sides with seasoning. Place chicken in a broiler pan.
  3. Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. (Chicken should be at least 165 degrees F in the center.)
  4. Transfer 1 lb of chicken to a serving dish and loosely cover with foil until ready to serve. Let the rest cool and package up and refrigerate to keep for another meal.

Tips and Timesavers

  • Buy chicken breasts already trimmed and separated into individual breasts.
  • Use a pre-made seasoning blend.
  • If you don’t have a convection oven add 5 minutes to the roasting time.
  • You can use chicken thighs instead of breasts, but you might want to pound them out a little first. Also, they won’t take as long as the breasts so keep a close eye on them after about 20 minutes of cook time.
