The title says it like it is – this easy recipe steams cod, potatoes and green beans all in the same pan at once. Simple and delicious! I kind of threw this recipe together one night when I was in a hurry, and it came out so good I could hardly believe it took only 5 ingredients and a little over 20 minutes.
Ingredients
1 lb cod or other thick flaky white fish
2 large red-skin potatoes
8 oz fresh green beans
3/4 C chicken or vegetable broth
1 sm jar marinated artichoke hearts
Optional garnish: lemon, avocado, capers
Tools
- 1 medium sharp knife
- 1 cutting board
- 12″ skillet
- spatula
- 1-cup liquid measuring cup
- small spoon
- small fork
- large spoon for serving
Directions
- Pour broth into skillet and turn heat to medium. Don’t let it boil yet. In the meantime, scrub potatoes then cut in quarters and slice about 1/8″ thick, then put in skillet with broth.
- Cover the pan and turn up the heat. When it starts to boil adjust the heat down to low and keep at a gentle simmer. Set a timer for 5 minutes.
- Trim green beans and cut any long ones in half so they are approximately the same size. When the timer goes off, add green beans to skillet, cover, and set timer again for 5 minutes.
- Cut fish into 3-4 equal-ish pieces, when timer goes off add fish to the top of the vegetables in the skillet, re-cover and set timer for 8 minutes.
- Using a fork, pull the pieces of artichoke out of the jar and roughly chop, discarding any hard outer skin. Skim several small spoonfuls of the oil off the top of the remaining artichoke liquid and spread over each piece of fish, then gently scatter the artichoke chunks evenly across the pieces of fish. (You will need to remove the cover to do this, so try to do it as quickly as possible, and then re-cover the fish. It should be almost done by now anyway).
- When the timer goes off, check for doneness (the fish should flake easily – if it doesn’t add another minute). Serve immediately (with garnish if using).
Tips and Timesavers
- Buying a bag of pre-trimmed green beans could save some time but sometimes the ends can get ragged and bruised so you end up trimming them anyway. If you do buy a bag check the condition and use them as soon as possible.
- Timing is everything in making this meal as fast as possible. Reading through the directions a few times before starting will help set you up for success.
- It’s likely there will be leftover vegetables, which you can package up and bring to lunch with a can of tuna fish or small portion of any pre-cooked protein.
