Add olive oil to skillet, and in 3 batches, brown cabbage slices; gently turning over with a spatula. Set aside.
Add more olive oil to skillet if needed, saute sliced onions for about 5 minutes. Add minced garlic and saute another minute.
Add all of sliced cabbage back to the skillet with onions and garlic. Saute until soft, about 8-10 more minutes. Sprinkle with salt to taste, and serve. May also be eaten at room temperature.
