Dinners This Week

If you’ve been following this program for a few months, some of this week’s recipes will be familiar. As a time-saving strategy (I needed to get this post out the door before noon!) I selected some favorites from the past several weeks of meal plans and made a few tweaks to fit this week’s schedule.  Hope you like it! (If not please do let me know in the comments below.)

Roasted Salmon

  • Make 2 pounds to produce enough for 3 meals. Use one portion (2 5-oz pieces) tonight.

eMeal Plan Week of Feb 11

Dinners This Week

It’s kind of a mixed bag this week.  Some beef, some vegetarian, some seafood… all easy with most of the time effort coming from chopping ingredients, which you can do while binge watching This Is Us.  If you have an extra 30-40 minutes handy on Sunday I recommend doing the chopping in advance so your meals during the week can go uber-quick. Otherwise we’re pushing the edge of the 30-minute target time on several of the recipes this week.

Sunday

This meal is going to knock your socks off.  It’s delicious and incredibly easy. The recipe has it cooking in the oven although you could use a slow cooker as well.  I love these easy one pot meals on a Sunday.  You cook, eat, get ready for the week and relax for the rest of the evening. eMeal Plan Week of Feb 4

Dinners This Week

The groundhog saw his shadow and we’re looking at six more weeks of winter, so let’s hunker down with some healthy comfort food to warm our cold bones this week. Whole grains, root veggies, and savory chicken and salmon are the staples of this week’s menu. Dinners This Week

This week we have 2 nights of turkey, 2 nights of fish and 2 nights are meat-free. It’s a nice variety of light, easy meals, with Sunday being the heaviest cooking night. The meatless entree on Wednesday night is simply divine!

eMeal Plan Week of Jan 21

Dinners This Week

This week we are going back to those amazing roasted chicken breasts, but this time we are going with a creole/mediterranean themed seasoning.  Hopefully you still have some leftover pork in the freezer from a few weeks to use up one night this week, but if you don’t I have some easy alternatives for you.  We also go big on salads this week (no specific reason, it just kind of worked out that way) and we have 2 nights of shrimp (frozen raw shrimp was on sale). You can substitute any relatively firm white fish or seafood (bay scallops work especially well) for the shrimp if you don’t have any on hand or can’t find any that’s reasonably priced.
